One memorable morning in Uji, just south of Kyoto, Willie was simply blown away by the much celebrated Kotobuki Matcha.

He knew at once its smooth, pure flavour would make the most extraordinary chocolate.

Here it is, perfectly balanced with natural cocoa butter, raw cane sugar and milk. Simply sublime.

The best ingredients make the best flavours, so all of Willie's chocolate is 100% Natural and with no soya lecithin or vanilla.

It is all made bean to bar in small batches in Willie's factory in Devon.

The Bean

All of Willie's white chocolates are now made with their own natural cocoa butter with its soft caramelised notes of cacao.

Where most white chocolates are made with de-odourised cocoa butter, thy press ours out of fine cacaos when they are making their cocoa powder. With such beautiful natural flavours, there is no need for too much sugar or any vanilla in our white chocolate.

Willie's have always used natural cocoa butter, but until they started making cocoa powder for their Hot Chocolate they had to buy it. Now, exciting to say, Willie's are completely self sufficient.

A cocoa bean is made up of cocoa solids and cocoa butter. So the quality of the butter is determined by the quality of your beans.

Cooking

Use this as the chocolate to make an unbelievable ice cream.
